LUXEY RECIPES | Luxey's Favourite Almond Butter Cup

We have something to confess... This Almond Butter Cup is one of Luxey Staff's all time favourite snack! 

We always taste the recipes that we post here and it can be easily said that this one was one of the biggest success between our staff - we could just eat them all day long! These Almond Butter Cups are just so fast and easy to make and doesn't evolve any baking. 

You already know that we are chocolate lovers and we love that cocoa can provide powerful health benefits like improvement of brain function and reduction in heart disease. But for that it is important to choose an organic high quality dark chocolate with 70% or higher cocoa content. 

Also, almond butter is a must in this sweet snack. It gives that punch of salt that we need in our sweets - and it doesn't hurt that it is a healthy fat, high in potassium, calcium, manganese, and magnesium. 

Almond Butter Cup

400g organic dark chocolate

2 tbsp coconut oil 

1/2 cup almond butter

2 tbsp shredded coconut

1 tbsp chopped almonds

1/4 tsp salt

 

1. Fill a muffin baking pan with muffin liners 
2. Use a heatproof bowl over a saucepan of simmering water to melt the chocolate and coconut oil together
3. Spoon a layer of the chocolate and coconut oil mixture in each muffin liner. Use just enough to cover the bottom and place in the freezer for 10 minutes
5. Meanwhile, mix the almond butter, shredded coconut, chopped almonds and salt together in a separate bowl
6. Remove muffin pan from freezer and spoon a small scoop of the almond butter mixture in each frozen muffin liner.  Make sure to smooth out that layer.
7. Cover the almond butter mixture with one more layer of the chocolate mix. Optionally you can finish them off by sprinkling some salt flakes on top
8. Place back in the freezer for 15 minutes to let set. 

 

Store the cups in the fridge to keep them fresh and ENJOY!
